Toledo at Coronado Springs review: Stunning views and meals like works of art at Walt Disney World

Toledo's stained glass ceiling

If you’re looking for fine dining with breathtaking views at Walt Disney World, Toledo – Tapas, Steak & Seafood is a hidden gem worth seeking out. Located on the 16th floor of the Gran Destino Tower at Disney’s Coronado Springs Resort, this rooftop restaurant offers a Spanish-inspired menu, spectacular panoramas, and a truly relaxed atmosphere that sets it apart from other Disney dining options.

A rooftop experience with a view

Toledo opened in July 2019 as part of the expansion of the Coronado Springs Resort and is designed to reflect the artistry and flavours of Spain. From the moment you step out of the elevator into its warmly lit interior, you’re greeted with a blend of striking modern stained-glass décor (including a light-filled, stained glass ceiling), full-length windows, and soft golden tones that echo Spanish architecture and art.

Before dinner, we enjoyed a drink at the adjacent Dahlia Lounge, a rooftop bar with open-air seating and a fabulous selection of cocktails and wines. It was the perfect way to ease into the evening while soaking in the views of Epcot, Hollywood Studios, and even Magic Kingdom in the distance.

The food: Artfully presented and full of flavour

Once seated at our table by the windows, we were wowed by the beauty of our dishes, which were presented like miniature works of art.

Plancha-seared salmon

I chose the salmon, served with a velvety asparagus purée, a sweet and smoky Vizcaina pepper sauce, seasonal garden vegetables, and little fried gigante beans, that lent a lovely crunch. A touch of shaved fennel added just the right amount of bite and brightness, and the salmon itself had a beautifully crisp crust. The presentation reminded me of an artist’s palette, with the asparagus spears arranged like paint brushes.

Rioja-braised chicken

My husband opted for the chicken, slow-cooked in Rioja wine, nestled on a bed of saffron-scented bomba rice, with sweet grapes and crispy chorizo migas. The rich depth of flavour in this dish was exceptional — and weeks later, he’s still talking about that rice.

Desserts with a twist

Dessert at Toledo was as much about texture and balance as it was about indulgence. Again, the presentation was stunning.

Chocolate ganache tart (plant-based)

This came with coconut frozen dessert, candied nuts, caramelised banana, and shards of caramel. It could have been overwhelmingly rich, but the sweetness from the fruit and nuts and the lack of a sugary kick in both the tart and the coconut provided perfect balance. While the creamy hit you usually get with dairy ingredients was lacking, I personally enjoyed this dessert too much to mind. Grown-up decadence at its very best.

Basque cheesecake

My husband’s Basque-style burnt cheesecake with a honey-vanilla sauce, almond crunch, and a white chocolate Chantilly cream was wonderfully light, served with fresh, glazed fruit that added a clean, refreshing finish. Despite my own dessert, I must admit to having had some pudding envy.

Atmosphere and service

The only small drawback of our evening was that service felt a little on the slow side — but in truth, it complemented the unhurried, elegant feel of the restaurant. With the sun setting outside and the twinkling lights of Walt Disney World appearing across the skyline, Toledo offers one of the most magical dining settings on Disney property.

Is Toledo worth it?

Yes — if you’re looking for a refined, relaxing dinner with panoramic views of the parks, Toledo should absolutely be on your Disney dining shortlist. It’s also one of the more affordable rooftop dining options at Walt Disney World when compared to California Grill or Topolino’s Terrace, making it an excellent value for the quality and ambiance.
